    I've copied "How to draw..." pages and made a packet for them to work on. I
    found a book on drawing horses and expected them to hate it... they didn't.
    They actually worked quietly for a few days. Then we moved on and some kids
    asked when we were going to work on them again...

    Give each student a poster of an artwork and have them fill out an art critique
    form

    if you have access to the books.

    Otherwise, there are sites you can insert words for crossword puzzles.
    How about copying something out of a high school art book, like Art Talk?
    How about giving them a Writing and Lit assignment?
