You're so not alone! We all struggle with this type of behavior, even veteran teachers like myself. There are about a gazillion different class management systems out there. Tom on these boards uses a Humanistic Discipline system that seems to work very well. I use something like that, but I just don't call it that. Whatever you use, the crucial element will be the consistency with which you apply that system. You're correct in not arguing with your students. But do you have a consequence if they continue to argue? I taught expected behaviors at the beginning of the year and have reinforced them repeatedly throughout the year. When students don't exhibit expected behavior, they get a mark in one of five different categories. Students who do meet my expectations get a reward time on Friday. Students who don't meet my threshold sit out and read or catch up on work. Again, there are many different systems. You'll need to find one that works for you. Mine might. Tom's might.
