I wouldn't find a textbook very useful in a technology class.
It works better for me to make up my own handouts for
students. YMMV

There is a series called Spotlight on... It includes books for
presentations, word processing, spreadsheets, databases, etc.
However, I didn't think they were any better than what I
could produce myself
