In the past I've used diaramas, mobiles, promotional posters,
video clips to advertise the book, story cubes, imaginary
magazine interviews with the main character, and story element
posters as some more creative ways for students to present
book reports. Some other ideas you can propose are student
developed games, bag reports (put in various items that help
sum up characters, stories, etc.), critiquing the book for a
student newspaper...
Hope these help. There are also a number of books you can get
from Carson Delarosa and Scholastic with more ides. I
personally believe the more creative you let the students be,
the higher the quality of what you get back.
