Stephen King had a paperback, Skeleton Crew I think, that had a
scad of scary stories in it. Many have become movies... Salem's
Lot, The Mist... and the stories are very different from the
movies.
Also, Richard Matheson's short novel, I Am Legend was a
blockbuster movie last year... the novel is waaaaayyyyy
different and scarier than the movie.
Poe is always a favorite of mine, though I think one of the
scariest stories has been Masque of the Red Death. It is a
social commentary that can tie in nicely with world history and
current social class struggles.
And here's a cool website to view short stories online...

Hope this helps.
