    "Siyahamba" comes to mind. I believe there's a version in the
    old MMH StM 6th grade book, and one of the other series books
    has a slightly different version. My elementary choir did a
    very simple 2-part version at the winter concert. My beginning
    middle school choir is working on a 3-part version from an
    octavo, I believe Doreen Rao is the arranger.

    "Yonder Come Day" is a Georgia Sea Islands piece, also in
    octavo form. This piece screams for Orff instruments to be
    added to it, though the octavo doesn't give you any
    instrumentation for it. My combined middle school choirs are
    working on this, and are excited that I'm letting them use the
    barred instruments and some small percussion (drums) with it.
