My school district just offered us a training on this. In addition to recording, you can also manipulate recordings, like taking vocals off a split track song (like in the elementary textbook CDs) as well as taking off the pesky "Number 42" from a recording you might use for your band/recorders on a concert. I'd be happy to share the handout in electronic form if you'd like. Some of it is specific to my district (like how to get on the server and such), but the other stuff could be useful.
