There is no "demo" of Audacity since it is freeware. The functions you saw grayed out were likely that way because you hadn't opened or recorded a sound file (.wav, .mp3, etc) and selected part or all of the wave form. Then the functions (Effect) become active. If that doesn't fix the problem, post what you tried to do and what happened when you tried it and maybe an idea will suggest itself.
