I always struggle to find a good fruit salad recipe. This
one though, is EXCELLENT... (definitely not WW! LOL). I've
taken this to potlucks:

TAFFY APPLE SALAD

1/2 Cup sugar
1 Tablespoon cornstarch
2 Tablespoons lemon juice
1 egg
Juice of 1 can chunky pineapple
8 oz. Cool Whip
3 Red Delicious apples (chopped)
2 Cups miniature marshmellows
1 1/2 Cups salted peanuts

Cook sugar, cornstarch, lemon juice, egg and pineapple
juice over medium heat, stirring constantly until thickened
(approximately 10 minutes). Cool. Stir in 8 ounces Cool
Whip, apples, chunk pineapple, miniature marshmellows and
peanuts. Mix well and chill. Tastes like caramel apples!
