Post: Oven Roasted Garlic Bulbs (Appetizer Spread)
Oven roasted garlic is a delicious spread on oven baked or
crusty french bread. Dig in your appetizer knife into a
clove, and smear the soft garlic over buttered bread or a
cracker with cream cheese. Also delicious smeared over a
fresh steak.
Ingredients:
2-4 garlic bulbs (the bigger the better - elephant or
colossal is best)
Butter or E.V. olive oil
sea salt
cracked pepper
Preheat oven to 350. Remove loose paper from garlic bulb
and slice across pointed end to expose into the tips of the
cloves. Place sliced side up on square of tinfoil large
enough to wrap entire bulb. Drizzle olive oil across
exposed area, and sprinkle with kosher or sea salt and
cracked black or white pepper. Slice a thin pat of butter
and place it across the top of bulb (optional). Wrap foil
up around bulb, and bake on baking sheet for 50 minutes.
Let cool and serve on appetizer plate with small cheese
knife with butter and warmed or toasted crusty bread.

Option - Cook with terra cotta garlic dish. Soak terra
cotta dish in cold water for 20 minutes. Prepare garlic as
above and place inside terra cotta dish and cover. Put in
cold oven and set to 350. After oven comes to temperature,
let bake for another 30 minutes.
Option - preheat oven to 350, prepare garlic as above and
place in terra cotta dish. Place dish in oven - uncovered -
with lid set beside it. After 20 minutes, place lid on
dish and bake another 20 minutes.
