Normally the list would be a group in/on OSX server. Either
machines or students. If machines they would have different applications
the students could use only on those machines that are different
from their "normal" set.

You might also use your Public folder for their work in progress and
your drop box for finished files. In your public folder you could have
folders for each class or student (however you prefer) to keep things
organized.

Do you have a list of students with login and pass words and
permissions/applications set up in Server Admin? If not that's where you
start.
