It is a good idea to engage students who come to gym
unprepared with a writing assignment. I had such students
sit in the bleachers and gave them an assignment about how
they could work to improve their skills in whatever activity
the class was doing. I did not send them out of the gym (to
the library, etc.)as many would get in trouble in the halls
or in the library. It was also unfair for other teachers to
have to deal with my students.

from Education World that should give you some good ideas on
writing projects.
