A neighbor brought me a bag of pears the other day from her
pear tree. This is the time of year for them. I know you
can make a pear pie that is similar to apple pie. But I
went looking for other recipes to use up these pears. I'm
snacking on Pear Coffee Cake now. It is excellent! The
pears make it moist.
PEAR COFFEE CAKE
1 1/2 cups sifted flour
1/3 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/4 cup margarine
3/4 cup sugar, plus 2 teaspoons, divided use
2 eggs
1 cup buttermilk
1 teaspoon vanilla
3 pears, peeled, divided use
Preheat oven to 425 degrees.
Combine dry ingredients in a large bowl. In a separate
bowl, beat margarine, 3/4 cup sugar and eggs. Blend in
buttermilk and vanilla. Dice one pear and add to wet
mixture. Add wet mixture to dry mixture, mix just until
combined.
Pour batter into greased and floured 9-inch baking pan.
Core and slice remaining pears and arrange on top of
batter. Sprinkle pears with remaining 2 teaspoons sugar.
Bake 40-45 minutes. Allow to cool slightly before serving.
Serves 6.
