Cheap Chili
One regular (14-16 oz) can of Chili Beans - beans already in a
mild seasoned sauce - for every 4 people being served.
Two large potatoes (3-4 small).
One large onion.
Two cloves garlic or a teaspoon of granulated/powdered garlic.
Salt and pepper to taste.
Optional: ground chili, chili flakes, pepper sauce or chili
powder to taste.
Also optional: 1/4 - 1/2 lb ground beef, chicken, pork, turkey
(game meat), or firm tofu. Or any combination of meats. Even
leftover meat from a previous meal can be used, just heat
through.
Chop and saute together in a Tbls oil (or cook until softened
in enough broth or water to keep from burning)finely chopped
onion and garlic (if using fresh). Chop potatoes into 1/2 to 1
inch cubes, add to onion and garlic and brown slightly (if
using broth or water heat but avoid cooking through yet).
Add meat if using and brown}Skip either/both if not using. If
using tofu heat through and brown a little, if possible. Add
chili seasoning if desired.
Add can of Chili Beans and cook on med to med-low heat until
the potatoes are cooked through. A bit of liquid may need to
be added to keep the chili from becoming too thick or dry.
Serve with a bit of chopped onion/grated cheese on top and
crackers, toast, tortilla/corn chips, tortillas or cornbread.
This dish lends itself to a lot of add-ins so go for it; a good
place to do away with a bit of leftover veg, meat, pasta and
even gravy. Also, any chili lover would tell you this is not
authentic but it can be made as spicy or mild as you want by
adding real chilies or even a can of canned chili. It is
cheap, filling and nutritious even without meat and can easily
be tailored to your family's tastes.
