Not sure if it will work, but:

try putting mittens or gloves on them

practice handling real eggs and show if they are rough, they will
break them and that's what would happen if they use their
 

fingernails and pound into the whiteboards

in housekeeping, more attention with the "babies" and relate how
you can't be rough with them because...let them list reasons

have them spread their fingers and arch their palms so that the
tips of their hands touch (practice with a tennis ball)

Use the tennis ball as the stylus, not their fingers
