I have a student who will be absent for a while, but wanted to get the next week's worth of work. I didn't have everything ready at the time, so I asked her for her parents' email address. I've just given her classmates a quiz; would it be acceptable to email her the quiz, or should I just wait till she returns?

mm If it's only a quiz, she could make up for it on return and you may omit this one. However, after they're marked and returned, send her a copy of the quiz, with answers so that she can stay in the loop as far as what she could have expected had she been in class and to assist her preparing for the final evaluations at the end of the course.
