I use excel and set up a spreadsheet so it has a box for each day and course (Latin I, II, III, IV, ENG)

At the bottom of the spreadsheet, I change the tabs to reflect the week. That way, I can easily change things and and enter things from week to week. I used colors to make it easier to read. My entire year is on the one spreadsheet.

I'm to put my homework on my school class page. I had to log in so many times to do one thing and I couldn't do it from home. grrr. So, I have my spreadsheet loaded into google docs and 'shared it' with the school website. Now I just open google and make any changes i want. Close it and it is automatically update on the school website! I only have to open one thing and log on once. Sweet!
