demonstration lesson plan

I just had an interview yesterday for a special education K-5 teaching position. I was very nervous and could have done better, in my opinion. I was told that I had to do a demonstration lesson plan in either literacy or math. I think I would like to do literacy. I will not know what grade or the kind of class I will be doing my demonstration with. Does anyone have any suggestion that can help me design a meaningful lesson plan. Of course, I will be observed by the director and two others. Since I was nervous the first time, my goal is to give a great lesson for the children and demonstrate that I am ready for this. HELP!!!!!
