treetoad, when you say to fold the pastry over the fruit, do you mean just the edges, leaving the middle of the pie open, or to completely cover the fruit? Or would either way work? The recipe is very mouth-watering and I want to try it soon! Thanks in advance for replying. newbie

Starting early looking for GREAT but easy holiday recipes. Having several groups of people between Thanksgiving & Christmas. What are you BEST casserole, side, or dessert sure hits? Would appreciate your help as the time will slip by quickly. Thanks
In a large skillet, brown 2 lb. ground beef (I used Walmart's 2.25 lb. 93/7% tossed in some dried chopped onion.)
Add and simmer until warm:
1 cup ketchup 1/4 cup mustard 1/4 cup brown sugar 1 cup pork and beans 4 cups chopped vegetables
(I added more ketchup and mustard after tasting and used 1/8 cup Splenda brown sugar blend. I just added the whole can of pork and beans and I used two cans Veg-all, drained.)

1 1/2 cu...See MoreA neighbor brought me a bag of pears the other day from her pear tree. This is the time of year for them. I know you can make a pear pie that is similar to apple pie. But I went looking for other recipes to use up these pears. I'm snacking on Pear Coffee Cake now. It is excellent! The pears make it moist.
PEAR COFFEE CAKE
1 1/2 cups sifted flour 1/3 cup cornmeal 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon ground nutmeg 1/4 cup margarine 3/4 cup sugar, plus 2 teaspoons, divided use 2 eggs 1 cup buttermilk 1 teaspoon vanilla 3 pears, peeled, divided use
Preheat oven to 425 degrees. Combine dry ingredients in a large bowl. In a separate bowl, beat margarine, 3/4 cup sugar and eggs. Blend in buttermilk and vanilla. Dice one pear and add to wet mixture. Add wet mixture to dry mixture, mix just until combined. Pour batter into greased and floured 9-inch baking pan. Core and slice remaining pears and arrange on top of batter. Sprinkle pears with remaining 2 teaspoons sugar. Bake 40-45 minutes. Allow to cool slightly before serving. Serves 6.
1 (10 ounce) bag Italian-blend salad greens 1 pear -- peeled, cored and diced 1/2 cup pecan pieces, toasted 1/2 cup finely shredded mozzarella cheese 1/3 cup Poppyseed dressing (I used fat-free; Italian-style dressing can be used instead, if desired)
To toast pecans: Toss pecans with about 2 teaspoons melted butter, just enough to coat. Spread in single layer on a cookie sheet and toast in 350 degree oven for about 8-10 minutes, stirring a couple of times. Cool when done.
Place the salad greens, pear pieces, toasted pecans and mozzarella cheese in a bowl. Pour Poppyseed dressing (or Italian style dressing)over all. Toss to coat evenly and serve.
DD is unemployed and on a very tight budget. She needs meals that don't take much from the pantry because she doesn't have much in there. Recipes that either use all that you buy or just don't need a little of this and a little of that (which of course, she doesn't have) would be appreciated.
One regular (14-16 oz) can of Chili Beans - beans already in a mild seasoned sauce - for every 4 people being served.
Two large potatoes (3-4 small).
One large onion.
Two cloves garlic or a teaspoon of granulated/powdered garlic.
Salt and pepper to taste.
Optional: ground chili, chili flakes, pepper sauce or chili powder to taste.
Also optional: 1/4 - 1/2 lb ground beef, chicken, pork, turkey (game meat), or firm tofu. Or any combination of meats. Even leftover meat from a previous meal can be used, just heat through.
Chop and saute together in a Tbls oil (or cook until softened in enough broth or water to keep from burning)finely chopped onion and garlic (if using fresh). Chop potatoes into 1/2 to 1 inch cubes, add to onion and garlic and brown slightly (if using broth or water heat but avoid cooking through yet). Add meat if using and brown}Skip either/both if not using. If using tofu heat through and brown a little, if possible. Add chili seasoning if desired.
Add can of Chili Beans and cook on med to med-low heat until the potatoes are cooked through. A bit of liquid may need to be added to keep the chili from becoming too thick or dry.
Serve with a bit of chopped onion/grated cheese on top and crackers, toast, tortilla/corn chips, tortillas or cornbread.
This dish lends itself to a lot of add-ins so go for it; a good place to do away with a bit of leftover veg, meat, pasta and even gravy. Also, any chili lover would tell you this is not authentic but it can be made as spicy or mild as you want by adding real chilies or even a can of canned chili. It is cheap, filling and nutritious even without meat and can easily be tailored to your family's tastes.

Tuna Noodle Casserole INGREDIENTS 1 (8 ounce) package wide egg noodles 2 tablespoons butter 2 tablespoons all-purpose flour 1 teaspoon salt (optional) 1 cup milk 1 cup shredded sharp Cheddar cheese 1 (6 ounce) can tuna, drained 1 (15 ounce) can peas, drained DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Coat a 2 quart casserole dish with cooking spray. In a large pot of salted water, boil noodles until al dente. Drain well. In a medium saucepan, combine flour, butter, and salt. Stir until butter is melted and ingredients are combined evenly. Add milk, and whisk until the sauce thickens (usually it is at the proper consistency by the time it begins to boil). Add cheese to mixture, and whisk until cheese is melted and mixture is well blended. Stir in tuna, peas, and noodles. Spread evenly in prepared dish. Bake in preheated oven for 30 minutes.
BBQ chicken
1 cut up chicken- or your favorite pieces 2- 2 1/2 cups BBQ sauce Put together in crockpot. Cook on low for 5-8 hours.
Quick Beef and Rice
1 pound ground beef or turkey 2 cups rice 1 package onion soup mix 4 cups water 1 15 oz. can cream of mushroom soup Brown the ground meat and drain if necessary. Add soup mix, rice, soup, and water and bring to a boil. Cover and simmer for 20 minutes, till rice is done. Options: You can leave out the cream of soup if you don't have it or just make a simple white sauce. If you don't have any onion soup mix, sauté an onion and add 2 tsp. beef bouillon instead.
Pasta & Turkey casserole
Brown 1 1/3 pounds of ground turkey (could use gr. beef) with a chopped onion
Add your favorite red spaghetti sauce (jar or homemade) You can also add a can of diced tomatoes, if you like. (Add as much sauce as you need)
Simmer for 15 minutes. Add cooked pasta- rotini and elbow macaroni work well. Simmer for another 10 minutes or so.
