I would say it depends on where you want to put the emphasis. Certainly, the last sentence is fine since the verb ending indicates the subject. The first sentence I would think you are putting an emphasis on tu, and the middle sentence your are emphasizing the piano as the instrument being played as opposed to any other instrument.
