According to the Bureau of Labor Statistics, there should be job growth in the curriculum specialist/instructional cooridnator area. This job requires different degrees and certifications in different states, but I would allow you to stay in touch with instruction without being in the classroom on a regular basis.

If you have an interest in technology and instruction, I would consider working an Educational Tech degree in preparation to become a technology integration specialist (or whatever it is called where you are).
