Not sure how creative but my middle school kids really like doing power points. I focus on the visual aspect of power points -- by that i mean a picture is worth a thousand words. my kids did a little research on their home country. I required 10 slides using transitions and layout templates in the pp program. I began with opening picture of map, second was their flag and I proceeded with famous historical figure (eg revolutionary/ first president, etc) famous event, favorite band/singer, favorite food, artist, etc). They enjoyed picture search and I limited to 2-3 short bullets for each slide. I know it's not too focused simply on independence but worked well for all levels. I'm sure there are better ideas out there -- also webquests may be good.
