Are any of you taking part in the protests? There were loads in the UK last night. I was at Book Group, but we watched the news and saw thousands of people out on the streets. Trump is certainly a polarising figure.

Mary B, thanks for the update on Shane. I've occasionally thought about him. Recovery from burns is such a long process. I wish him and your daughter the very best.
Flacka - So glad you are enjoying retirement. Sensible to have postponed the trip in the light of all that rain. Have a lovely time when you do go - come back and tell us about it.
Mary - Glad to hear that Shane is recovering, but what a shame he is still having surgery and treatment. It does sound as if he was sent home very soon after such major procedures. When's the wedding? Very happy for your daughter.
Betty-Ann - You are good to step up like this for your poor bereaved colleague. Hope the sub is someone special and that you all have an easier time once s/he arrives.

This amazes me. Our granddaughter age 9 has a robotics class she takes right in her regular 4th grade school day. Public Education IS doing something right and gearing towards our future. Go PUBLIC EDUCATION!

Best ever Mexican Salad Creamy Chipotle Dressing (Blend all) 2/3 cup mayonnaise 2 tablespoons freshsqueezed lime juice (1 medium lime) 1 to 2 chipotle chilis in adobo, deseeded 1 teaspoon adobo sauce (from those chipotles) 1 teaspoon honey or agave nectar or ½ packet of Stevia ½ teaspoon ground cumin ½ teaspoon salt Unsweetened "milk" if needed to thin Salad 4 cups chopped lettuce (green, romaine, etc) 1 15ounce can black beans, drained and rinsed 4 small cluster tomatoes or 1 red bell pepper 1 cup fresh or frozen (defrosted) corn kernels ¾ to 1 cup sliced or coarsely chopped olives (black or kalamata) 1 medium avocado, diced 1 cup crumbled Corn Chips Layer salad ingredients. Drizzle dressing on, or serve on side.
Salads: Cranberry Salad 1/3 cup chopped walnuts 1/2 cup fresh cranberries (I use dried) 7 to 8 leaves kale (preferably curly green) 1 tablespoon olive oil (I substitute cashew cream, which I make in my blender: cashews (preferably soaked) and water to make cream consistency) 2 tablespoons orange juice, preferably fresh (or OJ concentrate) or more as needed to moisten Zest of 1/2 to 1 orange, optional (but highly recommended) Salt and freshly ground pepper to taste Arrange walnuts and cranberries on a baking sheet or foil and toast for 3-4 minutes in toaster oven. Watch carefully to make sure the nuts don’t burn: remove sheet from oven! While nuts and cranberries are toasting, rip kale leaves into bite-size pieces. Discard stems. Massage for at least a minute. Yes, this means put your hands into the bowl (wash them first!) and get them dirty! Rub the leaves together to massage and break down the fibers. Kale will become darker and bright green as you work. Add dressing, toasted nuts and cranberries to kale leaves.
2 lbs. fresh carrots, peeled, cooked & pureed (I use my blender) 2 tsp. lemon juice 2 Tbs. minced scallions 1/4 lb. butter (1 stick), softened 1/4 c. sugar 1 1/2 Tbs. flour 1/2 tsp. salt 1/4 tsp. cinnamon 1 c. milk 3 eggs 1 egg white, stiffly beaten
Combine all ingredients except egg white. Mix well. Fold in egg white. Pour into well greased, 2 qt. souffle dish. Bake in preheated 350 oven 50-60 min. or until center is firm to touch. Serve immediately.
This recipe was originally posted on Tnet (sorry, I don't remember by whom) and my kids love it! It goes well with turkey or ham.
Sweet Potatoes and Cranberries
68oz can sweet potatoes (not candied), reserve liquid 4 c. fresh cranberries
Mix sweet potatoes and cranberries in large greased baking dish.
In bowl Combine: 1 c four 1 c brown sugar 1 c oats 2 tsp cinnamon
Cut in 2/3 c. butter until it forms coarse crumbs. Add crumb mixture to potatoes and toss. Pour a bit of the juice over the potatoes. Bake uncovered in 350 oven for 35 min or until some of the cranberries have popped.

You're ahead of me. I have only wrapped things for people we were meeting before Christmas. Tonight is the big paper/selloptape/scissors event. I have everything set up in the front room and everyone else is banned until the all-clear.
Love Christmas and look forward so much to having the children home. My best times involve us all being together and each time is precious because, as they get older, it'll become less and less likely that we'll have them all at the same time.
