I made noodles last night, but they were rather tough. The recipe is 1 egg + 1/2 c flour per person. I wonder if I overworked the dough? or did I not work it enough?
Probably overworked the dough. That is what my mother always cautioned me against when making noodles. I haven't done it in years and years and . . . Well, you get the idea. Zodea I am not sure you can overwork the dough? I usally run out of steam before I get even close. Lots of kneeding. I make mine by hand. Did you use a machine?

How thin did your roll the dough? one egg per person actually seems like a lot. I probably serve one eggs worth per 2-3 people and we always have plenty. (I make chicken and noodles). <...See More
