Thai Chicken – 2 ½ lbs chicken pieces (You should try the big bag of frozen chicken legs at Kroger, they are HUGE and absolutely delicious) 1 cup hot salsa 1/4 cup peanut butter 2 tablespoons lime juice 1 tablespoon soy sauce 1 teaspoon minced fresh ginger cooked with white rice for serving ½ cup peanuts, chopped 2 tablespoons chopped fresh cilantro

Place chicken in crock pot. In a bowl mix together salsa, peanut butter, lime juice, soy sauce and ginger. Pour over chicken. Cover, cook on low 8-9 hrs or on high 3-4 hours until done To serve, place chicken over rice, pour sauce over chicken, sprinkle with peanuts and cilantro. (from Crockpot recipes)
