I heard a teacher at school today say that she always keeps phylo dough in her freezer. We were talking at lunch about things that are always good to have on hand. I got a call just before she was explaining what she uses it for.

What are things I can use it to make? Please don't tell me to google it.

spanokopita Mix quickly sauteed spinach, ricotta, feta, a little lemon juice. Cut the sheet of phyllo into four strips (I usually use two sheets of dough), brush with butter, add a little swirl of honey down the dough, then a teaspoon or more of the spinach/cheese mixture. Fold the strip up like a flag and bake.

Kelly Z Thank you. We love spinach, so this would be perfect. I just bought feta, and I don't have ricotta but I guess I could cheat with some cottage cheese.
