Any good, lighter meals to share?

This is one that we like.

Marinated Shrimp & Artichoke

2 lbs. cooked, peeled shrimp 1/3 c. olive oil 2 Tbs. sugar 1/2 tsp dry mustard 1 onion, thinly sliced 1/3 c. balsamic vinegar 1 clove garlic, minced 1 bay leaf 2 cans artichoke hearts, quartered 2/3 c. black olives

Whisk oil, vinegar, sugar, mustard, and garlic. Stir in bay leaf. Add shrimp, onion, artichokes & olives. toss well. cover and chill at least 8 hours.

Serve with some crusty bread for an easy summer meal.

My broth is usually a combination of V8 juice (spicy is fun) and chicken or vegetable broth (canned is easy).

ressa One of our faves is grilled shrimp skewers and veggies.

Skewers -- if using wooden/bamboo soak for 20 to 30 minutes before skewering the shrimp and grilling.

Large raw peeled and deveined and rinsed in ice cold water. One bottle your favorite vinaigrette or homemade (ours is Newman's Own Olive Oil and Vinegar)

Sourdough bread Swiss Cheese Romain lettuce Sprouts Avocado Cucumber (sliced on the long side) Tomato Red Onion

Assemble and enjoy with a side of fresh fruit. A peach, plums, apple slices...

Don't forget the brewed ice tea or lemonade.
