Here is a crock pot recipe that 2 FB friends sent me. I tried it yesterday and it is very good. I was told that any leftover chicken is wonderful for making chicken salad. The smell will drive you crazy. Very easy.

Crock Pot Balsamic Chicken

2 tsp. minced dry onion

1 tsp. dried basil

1 tsp. garlic powder

1/2 tsp. salt

1/2 tsp. pepper

1 TBL. olive oil

4 minced garlic cloves

8 boneless, skinless chicken breasts or thighs

1/2 cup balsamic vinegar

Sprinkle of fresh chopped parsley

Make a rub of the first 5 dry ingredients, mixed in a small bowl. Rub on both sides of each piece of chicken, set aside. Pour olive oil and garlic on bottom of crock pot. Place seasoned chicken pieces on top. Pour balsamic vinegar over all. Cover and cook on high 3 1/2 - 4 hrs. Sprinkle with fresh parsley when ready to serve.
