Curriculum wise it seems a fairly reasonable class to teach. I have seen it done two ways. At one school it was mostly taught out of an out of date text book with a few project requiring group video projects. A friend who already teaching suggested that I add target jobs for everything I am qualified for, regardless of desire. He got a job that wasn't his preference, but it was a foot in the door.

If one is willing to potentially teach anything on their certification to get a foot in the door then it is a perfectly fine plan. The only caveat being that you should be prepared to teach it and do at least a decent job of it since you would be on two years of probation (during which time you can be released without cause).
