Our staff party is next weekend. I need to bring vegetables for a potluck. Potatoes have been taken. Any ideas how to do a green vegetable without a lot of creamy sauce? Thanks for any help!!!

merimom Well, obviously a salad would work. But it sounds like you are looking for a hot vegetable.

You could do marinated roasted vegetables of some sort. Cut up red, green and yellow peppers, onions, green onions, broccoli florets, pieces of asparagus - - whatever. Marinate in spices. Roast in the oven or in a foil packet.

Maybe this? If you don't have to do a warm or hot dish, how about antipasto with veggies, marinated veggies, and a small bit of chunked cheese? Lots of good recipes on line for this. Makes a pretty presentation too

here are some These are 2 family favorites

Gordon's peas and mushrooms

20oz frozen peas 1/4 lb. mushrooms, sliced 6 green onions, sliced 1/4 c. dried parsley 1/2 c. parmesan cheese 1/2 tsp salt (I don't use it) 1/4 tsp pepper 1/3 c. melted butter.
